Black Bean Burgers

Ingredients:

1 can of black beans (15 ounces), drained and rinsed
1 cup cooked rice
1/4 cup onion, finely chopped
2 Tbsp salsa
1 egg beaten
Cilantro, salsa, sour cream (optional garnishes)

Preparation:

Mash beans. Mix with rice, onion, egg, and salsa.
Spray skillet with cooking spray and place over medium heat.
Spoon 1/2 cup of mixture into skillet and flatten to 1/2 inch thick.
Cook 4-5 minutes on each side.
Serve with optional garnishes of cilantro, salsa, and sour cream.
