Dan’s Curried Beans
2 large onions – diced
3 large tomatoes – diced
10 Garlic cloves – diced
1 Red pepper – diced
10 Tbs of curry powder
6 Tbs of oil
1 Tbs Pepper
1 Tbs Salt
8 cups of cooked/canned beans (black or other)
Saute onions and garlic in oil in a large pot for 15 minutes on medium heat. Add the salt, pepper, and curry powder. Cover the pot with a lid. Stir regularly.
After the onions and garlic have cooked down some – add the diced pepper, tomatoes, and beans. Add 1 cup of water.
Simmer on medium-low for 30 minutes. Stir every 5 minutes.
Remove from heat. Serve over rice.
Makes enough for 15 servings.
