Brownell Family Meal Plan – “Rice & Beans Around The World”

The Brownell family in Portland, Oregon, chose a theme of “Rice & Beans Around The World” for their first year of Rice & Beans Month. Amy Brownell is a self-described “easily-bored cook” who often seeks inspiration from online recipe sources. Check out her list below for a potential new meal idea or two!

*Amy’s disclaimers: Many of these recipes are like ones I’ve made before, but not exactly.  Others I’ve never made, but they look about right. And when using recipes, I often substitute, add, or leave out things. And I definitely multiply.

Amy's vegetarian paella simmers over the fire

  1. Haitian Black Bean Sauce
  2. Haitian Rice with Beans, usually served with chicken in a tomato sauce (we’ll see)
  3. Vegetarian Paella
  4. Mushroom Risotto
  5. Mujadarrah
  6. Spanish Lentils, with or without sausage
  7. Vegetarian Sushi, something like this:
  8. Veg Stew over Polenta
  9. Brussels Sprouts Fried Rice (this looks interesting)
  10. Moroccan Lentil and Veg Stew
  11. Black Eyed Peas with Mashed Sweet Potatoes (I think I’ll make my potatoes more plain and serve the peas on top)
  12. Lentil Sloppy Joes, serve over polenta?
  13. Ethiopian Lentil Stew
  14. Vegetarian Red Pozole
  15. Pineapple Fried Rice (I might even leave in the ham as a special treat)
  16. Avgolemono Soup (I will make with rice)
  17. Zucchini and Black Bean tacos
  18. African Peanut Stew, serve over quinoa?
  19. Mexican Refried Beans and rice, maybe make into burritos and
  20. Black Bean Soup (I don’t use a recipe)
  21. Vegetarian Curry over rice (no recipe)
  22. Quinoa Black Bean Burgers
  23.  Lentil “Meatballs” with sauce served over rice? quinoa? polenta?
  24. Falafel Served with Lemon Rice
  25. Haitian Rice Pudding
  26. Veg Barley Soup
  27. Veg Chili and Cornbread (no recipe)
  28. Chickpea Picatta with “Caulipots” (heavy on the cauli)
